Title: Unpasteurized Whole Milk

Mrs C and I are wanting to make some mozzarella and ricotta cheese at home but the kit we got at high gravity says to use whole unpasteurized milk.  I checked Natural Farms & Whole Foods but can't get it there.  Other than Swan Brothers in Claremore anyone else know where we can get unpasteurized milk for cheese making in Tulsa?  Anyone have success using pasteurized milk for the process?

Did you try a cow?  There are lots of them.  I suppose you would need to catch one and squeeze it, but I'm not sure how that's done.

Now Gaspar, you can't just go around town squeezing people's cows. That'll get you a lawsuit and a front page story.

The trip to Claremore is WAY worth the effort!!  Their milk is fantastic!  Have been drinking it for many years - couple of decades!  And their cheese ain't too bad, either.  And where you gonna find unpasteurized cream by the gallon (only occasionally available)?

You will need to shake it, because the cream rises to the top and forms a layer that needs to be mixed back in for drinking.

We sometimes buy a couple gallons at a time and freeze them, then thaw to use.  I prefer fresh, but even thawed is better than most store bought.

Last I heard, there were only two raw milk dairies left in OK, and the other was supposed to be out west of T, somewhere.  (Rumor...)

Don't you??  And why not??

SWMBO uses for coffee. 

Turn it into whipped cream for strawberry shortcake!!
Make a batch of homemade biscuits for breakfast.  Eat half of them.  Save the rest for that evening, letting them sit on the counter to kind of dry a little bit.  Evening desert, break a couple of biscuits into large pieces and place in a large bowl.  Put a few scoops of ice cream on top - vanilla, of course!  Pour about a quart of strawberries over the top.  Then add a big glob of whipped cream (soccer ball size) on top of the strawberries. 

Then make some for the wife....

Yum!!


I think this is the other dairy I had heard about - sounds about right place.

You might try the Blakely family farms in Oologah. The have a trailer tomorrow at the downtown farmers market at lunch time and usually on Thursday nights at the Pearl Farmers market.

Back before rocks turned to dirt, milk delivered to your door by the dairy was Pasteurized but not homogenized.  The cream separated and rose to the top.  If you wanted a glass of milk (whole milk), you shook it up and poured.  If you wanted some cream for coffee or to whip for strawberries, you poured it off the top.  Milk tasted good back then.  Today's milk is analogous to Millercoorsbud Light.

One time when one of my cousins was staying with us, his grandfather (a big wheel at WaWa Dairy Farms) rode along with the regular delivery man and surprised my cousin with a short visit at our place.

While it might make some difference in the flavor of your end product, you don't really need to use unpasteurized milk to make recotta or mozzarella.

"Ultra"-pasteurized seems to make a difference in the solids you get according to what I've read on line as that seems to kill some of the enzymes beneficial to cheese making.

I have a family member who grew up with water buffalo.  Used them for farming, milking, etc.  Lower yields but more versatility. 

Anyway, I have yet to try the milk, but hear good things about it.  If I ever get back into ranching, I plan to raise some water buffalo.  Excellent draft animal, too.

There is this place in northeast Oklahoma - most of the links on their page don't seem to work for me, but the place looks interesting and when the opportunity arises, we plan to visit and see about getting some milk and/or meat.  Might be interesting...the mozzarella is supposed to be real good.

I think real Italian mozzarella is made with water buffalo milk.

Probably, but I susptect the distinction is not much for fresh cheeses like recotta and mozzarella.  I 've made recotta with regular grocery store whole milk and it blows away the recotta you can buy in the store.
