Title: Top That! on 81st and Memorial

Sign just went up. 

I've heard about this place.  It's supposed to be like a California Pizza Kitchen, except each pizza is personal and not expensive like CPK.  Hundreds of toppings or something.

I'll see if I can get some more info.

I wondered why Quiznos was "closed for remodeling" for so long.

Quiznos has been disappearing here in AZ as well. There was at one time 5 Quiznos in Gilbert AZ, now there is one, and after getting a sandwich there recently I understand why. Ordered a prime rib and cheese sandwich, and could not get horseradish sauce from the dispenser at 11:30 in the morning. Got my sandwich and after eating it, I could have made my own that was better.

Quiznos has been a disappointment in my opinion for the past few years.  It always sounds like a good sandwich but the quality of their ingredients is horrible. And somehow they seem hire worse employees than Subway. 

I will be excited to try out the new Pizza place..

Quiznos suffered in some of the same ways Dilly Deli limped out of the gate. No matter how "nice" the product is, it is still a sandwich and people go into the experience expecting certain price points, options and materials. Subway also launched the $5 footlong campaign nearly every other month which made the $8 quiznos sandwich even less appealing. Quiznos has since changed their menu and reduced the size of their bread which in turn makes for a lower-priced sandwich. It doesn't seem to have changed much. Being known as the "pricier Subway" isn't much of a business model.

From what I've heard from a franchise owner, competing with Subway has killed Quizno's.  Corporate has forced low price low margin items on them like the tiny little flat-bread sammies, and $5 subs to compete with Subway.  The food, labor, and franchise costs are higher than the margins they are making on such items and so the franchise owners are dropping like flies.

The only thing I like about Quizno's is the "Batch 88" Chili sauce. 

It looks like Top That! is ready to open.  I've seen them doing what looks like final punch list stuff today.

+1 on the Chili sauce

I bought a couple of bottles of "Batch 81" then it was replaced with "Batch 83" Are they up to 88 now?

I used it as dressing during a brief period in which I experimented with putting seemingly random vegetation into my mouth (people call them "sah-lauds".) Luckily Joe Momma's opened shortly thereafter.

Ok, they're not open yet, but I saw some folks out there today working on the restaurant.   Stuck my nose up to the window to check it out, and was waved in by one of the employees.  They were experimenting with the ovens and MAKING PIZZA for the construction guys, a cop and someone installing big video monitors.   I got to taste a slice.  It was awesome! Extra crunchy hand-made crust.

I don't really know how many ingredients, sauces, crusts and cheeses they offer, but the looked extensive.  The crust was just damn good. . . I'll go back for that alone.  

I now have an invite for my family to their soft opening next week. ;D

I did not get a final open date from them.

Went to day 1 of the soft opening, took my son (2yo) and the wife.  She had the Paso Chicken Pesto, and I had the Meat Market.  Pierce had a 6" Italian Sausage and cheese.

The Paso Chicken Pesto had a very fragrant pesto that was delicious, but I wouldn't recommend going back to the office after unless you have a tic-tac.  The red onions were like sugar, and the chicken was plentiful.  This was a good pizza.

The Meat Market had a sweet red sauce with fresh diced tomatoes in it.  One of the meats was Siegi's kilbasa, and I noticed that there was a featured Siegi's Oktoberfest pizza on the menu too.  This pizza was also sprinkled with crispy apple-wood smoked bacon and a couple of different cheeses.  I will need a bi-pass.

Today was their grand opening.  They were packed!

I opted to create my own:
Multi-grain crust, Angry Red Sauce (is awesome!), mozzarella, red onion, apple-wood bacon, roasted garlic cloves, fresh tomato slices, Italian sausage, and chicken, then topped with sharp cheddar and asiago cheeses. It was perfect!

Don't know how they can afford to sell these for $5.99?  The toppings on mine had to be worth at least $6.00.

For $2.99 we got a 6" kids pizza for my 2yo.  Alfredo, mozzarella, sausage, crispy fried carrots, and black olive. Good size for kids.

I highly recommend the Multi-grain crust, and the roasted garlic cloves!  Most of the other people in line were getting the Octoberfest.
