Seems reasonable but I've never seen "I need....... done by an amateur.".
I talked to Auto Upholstery over on Mingo. He might have heard me incorrectly, but my pieces were all ready OUT of the car and just need to be re-covered. A and C pillar, headliner, and sunroof and got a quote of $525 :o :o :o For that price I could have bought all brand new pieces.
Soo... off to JoAnns and Autozone for fabric and adhesive. $60 and 12 hours later I'm ready to put my trim pieces back into my car. :)

Figure they would be a bit faster than you. 8 hours at $60/hr = $480 for labor. Add your $60 for parts and get $540. Probably not too far off but I would also opt for trying it myself. $60/hr would be the burdened shop rate, not what the mechanic gets. Try the labor rate at a car dealership lately?

Final bill was $60 for fabric/glue and ~16 or so hours of my time.
Now if I had only done it over a year ago when the headliner first started to sag >:(
