We did terrariums this year.  Purchased some inexpensive glass vessels (Michaels, Hobby Lobby, or Garden Ridge) and then added about a cup of crushed charcoal to the bottom and topped with potting soil.  Then I took the kids out into the woods to forage for miniature plant specimens.  We found lots of moss, tiny lilies, and several other small plant varieties that we had fun assembling (jarscaping) with chopsticks. Each terrarium then received either a venus flytrap or pitcher plant or a leaf from a miniature african violet. 

These are great gifts for anyone with an office because they require little care and are always changing.
