While reading in another thread sushi grade tuna was mentioned and my curosity was piqued.   What is sushi grade and who grades it.  After a little investigation, there is no such standard grading called sushi grade.   Here is where I did some research.   http://www.sushifaq.com/sushi-grade-fish.htm

So when your shopping for sushi grade tuna your depending on the fishmonger.
